Fermentation is a journey, and Juiceship charts a course where wild meets juicy. This farmhouse ale spent a night in thier coolship, pulling in native yeast from the Texas Hill Country air before fermenting in stainless with Voss Kveik yeast. From there, we layered on fruit—40 gallons of fresh-squeezed orange and pineapple juice (5% of total batch volume!) and a half-pound per gallon of peach puree—before dry-hopping with hand-selected Simcoe and Nectaron hops for an aromatic citrus swell.
Juiceship is an exploration of fermentation, a balance of fruit intensity and structured hop bitterness, and a nod to the wild elements that define Jester King.
